Hearty Salmon-Vegetable Chowder
INGREDIENTS:
2 cans (7.5 oz.) or 1 can (14.75 oz.) BUMBLE BEEŽ Salmon, drained
1/2 cup chopped onion
1/2 cup diced celery
2 tablespoons olive oil
2 tablespoons flour
4 cups 1% milk
1 package (1 lb) frozen mixed vegetables
2 cups diced, cooked potatoes
Salt, to taste
DIRECTIONS:
Remove any bones from salmon and break into chunks. In a pot, cook onion and celery in olive oil until tender. Blend in flour. Cook, stirring constantly, until heated. Stir in milk. Cook until mixture thickens. Bring to a boil. Reduce heat, add frozen vegetables. Bring to a boil. Cook slowly for 12 minutes until vegetables are tender. Stir in salmon, potatoes and salt. Cook until heated.
